I spent a year overseas when I was 18. They had panini machines in their homes. I was amazed how simple sandwiches became amazing little stuffed pizzas or just really good toasted sandwiches. So I brought one home. Flash forward (ahem) years and the panini has become a standard at coffee shops, gourmet grocery store delis and cafes around the country.
But still I don’t know anyone who owns one. Which is a surprise because they’re not expensive, easy to clean and readily available.
This particular one by Breville (the creators of the Panini Press) can make two panini sandwiches at the same time (even two different sized sandwiches because of the special hinges). It’s stainless steel (it looks super sexy) and the non-stick coating will handle metal utensils and you don’t have to use oil or butter to on the outside of the sandwiches.
In short – it’s a good one that will last. And, it’s on sale for $70 from $100.
Some ideas for good paninis:
1) Margherita: fresh mozzarella with tomato slices and basil on sliced Italian bread.
2) S’mores: if you can find graham bread (made with graham flour and molasses), use it, otherwise anything will do. Add chocolate and marshmallows.
3) Salmon (canned works great) with dill havarti on rye
4) Prosciutto and smoked gouda.
